Whether it is summer or football season, there is never a bad time for a good Brat. To help you craft the perfect game day menu – or any day menu – the chefs in the Gillette Stadium kitchen have opened up their cookbooks to Patriots Nation. With this Brat in your arsenal, there will be no fan left hungry.

Beer Braised Brats
- For the pickled cabbage
3 cups of cabbage, finely shredded
1 cup apple cider vinegar
½ cup water
2 T pickling spice
1 garlic clove, crushed
2 T sugar
1 T salt
For the brats
4 Bratwurst
1 ½ cups water
1 large slice of onion
1 bay leaf
1 bottle of beer (our choice is always a Bud!)
4 pretzel rolls
Your choice of mustard
Instructions
Make the pickled cabbage, starting with the brine. In a saucepan, combine apple cider vinegar, water, pickling spice, garlic, sugar and salt, bring to a boil over high heat, strain through a mesh strainer and cool. In a large mixing bowl, combine shredded cabbage and cooled brine and mix well.
Next, prepare your Brats. In a large saucepan, combine beer, water, onion, bay leaf and Bratwurst. Simmer on medium for 15-20 minutes. Drain and build your Brat! Lay Brat on pretzel roll that has been slice length-wise. Spread mustard on Brat. Layer a good amount of pickled cabbage. Enjoy!
