From the Gillette Stadium Kitchen: Sweet potato quinoa burgers

The start of the football season may be a few calendar pages away, but it is never too early to start daydreaming about mouthwatering tailgate recipes and game day snacks.

The start of the football season may be a few calendar pages away, but it is never too early to start daydreaming about mouthwatering tailgate recipes and game day snacks. 

The chefs in the Gillette Stadium kitchen have opened up their cookbooks to help Patriots Nation prepare and perfect new meals for game day and every day. Test them out during your summer barbecues. Master them during preseason celebrations. Make them your own by the time the Patriots kick off in Arizona.

Sweet Potato Quinoa Burgers
Ingredients
2 cups quinoa, cooked and cooled
1 small sweet potato, baked, mashed and cooled
¾ cup bread crumbs
1 mushroom cap, chopped
½ small zucchini, shredded and squeezed to soften
2 T onion, chopped
1 ½ tsp lemon juice
¼ tsp red pepper flakes

Instructions
In a large mixing bowl, combine quinoa, lemon juice, zucchini, onion, mushroom, red pepper flakes, bread crumbs and sweet potato.  Mix well.  Shape into 4 patties.  Heat skillet and coat with olive oil.  Cook patties until golden brown on each side.  Serve on roll of choice with lettuce, tomato, kale slaw, cole slaw, mustard, guac or any other condiments of choice.  Enjoy!
